“Would I be able to use the 2.1 HDMI cable that came with the PS5 to get the 120hz on this monitor or would I have to use the 1.4 HDMI cable that comes with this monitor.”

Use the Ps5 cable, you’ll still get 120 fps over it with the monitor!
