Great question. I hope that by Pro 620, you are speaking of the HP OfficeJet Pro 6230. The major difference between the 2 printers is that the 6230 is not an all-in-one printer. The 6230 is just a printer whereas the 8630 is a printer, scanner, copier, and fax. The 6230 prints 18 ppm black/10 ppm color and the 8630 prints 21 ppm black/16.5 ppm color. Also, the 8630 comes with 2 paper trays that can hold 250 sheets each (the 6230 has a 225 sheet tray) and also has an auto document feeder that can scan/copy 50 sheets at once. The 8630 has a glass scanning bed that can scan legal size pages. The 8630 also has a touch screen, NFC touch to print, and walk-up USB printing. The 6230 is a much smaller printer compared to the 8630 because it is a single function printer.
