It depends on what type of beans you are cooking. Fresh green beans and Italian flat beans ( Roma beans) are great in this cooker and fine in under 10 minutes. Is you hydrate dried beans for a ham and bean soup they come out very tender since you are cooking with pressure and all the moisture is contained in the cooking container. No loss of steam means no loss of flavor.
