• It's on the ASC mode, just change it to standard and it'll stay constant.

• Check if you've got the "Auto Vol" set to On. If so, more than likely, that's what's doing it. It adjusts volumes up, and down so that you don't have whisper quiet scenes follow by explosions causing you to change the volume constantly.
