You will lose use of your present phone as soon as you request a transfer of your current number to the new phone. I had purchased a new SIM card from my provider and once I put it into my new phone, I was able to request a phone# transfer. From the time I pressed submit, my number had transferred to the new phone within an hour. I couldn't send texts or make calls from the old phone during that hour.

Most carriers can activate a phone either as a new device (where you still have your old phone, but have to pay the line access fee and other costs for the new one additionally) or activate the phone as a hardware swap (where the old phone is replaced by the new phone, your number and service move to the new one and the old one becomes a very small Android tablet). You'll have more options if you activate the phone in-store, as I believe only the prior option is available online. Fortunately, having a human being on the other side of the desk causes questions to get answered a lot faster.
