• There is an on and off button. The timer can be set in minutes, however you have to use one of the presets. I use Saute to preset mine the most

• Timer can't be set in minutes for this, unfortunately. I use a cellphone / microwave / kitchen timer. There is a Keep Warm/Cancel red button. When you have selected a cooking setting, it's considered "ON".
