This question isn't specific enough. Mainly because different settings allow different amounts of space for photos. So with RAW you will have less space because your image is using more space to collect more data. In Large JPEG setting you will have more space for images compared to in RAW, because the data is compressed to a certain degree to allow more photos. The smaller your JPEG image the more space you have. All in all 1GB holds about 250 images, from there you can do the math. THIS IS AN ESTIMATE.

Documents usually do not require as much memory as photos. It all depends on the size of each, I'd say that 64 GB's can hold a very large file cabinet of documents.

I used it in a DSLR camera and can get up to 9,000 high-resolution photos. If you're just scanning documents, they will not need to be nearly as high resolution. Quick math- I just opened a single scan on my computer. One page scan is 510kb. 1 gb= 1,000,000kb. At the rate of 510kb per page, you can get approximately 1,961 pages per gb. 1,961 pages x 64gb = 125,504 pages. But this is a very rough number as different scanners will have different output file sizes and not all scans are created equal.
