“The Rear Surround Speakers don't seem to work in any mode other than 5ch stereo.. It works fine during the YPAO test and when I set the mode to 5ch stereo.. Otherwise, I don't hear them at all. Am I missing something?”

5ch stereo is a DSP mode to simulate 5ch sound from a 2ch source. If you watch a DVD/BluRay or off-air digital TV broadcast that has a surround sound audio stream and you have connected to this receiver through an HDMI port, you will hear the surround for your rear and center speakers that is encoded in the audio mix.
