“Are you able to increase the ram or storage on this laptop or is it fully soldered and cannot be increased. Also which Ryzen 5 Processor is it, I'm looking for a 6 core one but if it's the 1500X, that's fine as well. (A ZEN+ one is too expensive for this)”

The processor is nothing to flop at, it's amazing irl usage. Ram can be upgraded, it has 2 slots, 1 in use with 1 x 8gb. It has a second SSD/HDD slot ready for you.
