AS LONG AS it fits over the rim. If it's a thick earthenware pot it might not fit. A metal pot will generally work fine. TIP: Start with water not too far from the temp you'll be cooking at - it will save you significant heat-up time! Always start just a little UNDER not OVER the needed temp - it's a heater, not a water cooler! I'm attaching a pic of the 11.5-quart pot I happily use. If the walls aren't a lot thicker than this one yours should work just fine.
