Would this work hooking up to a HP all-in-one monitor? null

I don't know, I hooked mine to my TV monitor. If your all-in-one doesn't include a pc hard drive, then maybe it's possible. You could purchase a mini display port to VGA adaptor and connect the pc monitor to the MacMini that way.

As long as the monitor has an HDMI port you should be fine.

It'll work with any monitor with an HDMI input. It will not do VGA by way of an adapter. If by HP "all-in-one" you mean the PC, the answer is no. The HDMI port on that is to connect a second monitor to the PC and is not an input.
