A:AnswerIt has nonstick coating.It doesn't flake but you will notice some very small areas that will miss some coating over time.I always wash by hand i use paper towel with soap on it and then use a sponge non scratching. And hand dry the company could have did a better job with that tray and I knew ahead of time of some reviews it mentioned it but picked it up on a deal of the day for my sister she loves it at $39.99 I paid a little more for mine. Cooks a five 6 lb pork loin in an hour and 10 minutes at 370°, 140 internal temperature. I've cooked the whole rack of ribs a whole chicken and pork loins mainly and it cooks too perfection.
