“Can I make more than just the two shots of expresso on a single brew? For example if I have 4 or 5 people waiting I'm going to have to get new ground coffee and make doubles only?”

yes, the max is two at a time as coffe grounds have a finite amount of coffe you can extract, so, because the portafilter is designed to make fancy espressos and not pots of coffe, it maxes out at 2 espressos per coffe fill.
