• According to the description of this listing on the Bethesda store, it will be redeemable only on the Bethesda Launcher: https://gear.bethesda.net/products/doom-eternal-collectors-edition#imageThumb "The PC Version of the game will come with a printed code and the code is redeemable on Bethesda.net." Although this is the collector's edition, I'm sure this applies to the standard edition as well.

• No, PC physical copies will come with a code for Bethesda's launcher. This has been confirmed by Bethesda themselves, if you want it for Steam you will need to pre-order it through Steam.
