Hey, We'll be glad to answer your questions. The description means that the cooktop used induction cooking. This means that only certain cookware will work. To best determine if it will work, use a magnet. If the magnet sticks to the bottom of the pan, it will work. Convection means that the oven has the option to use convection baking. Convection baking utilizes a fan to promote more even cooking. We're here if you have any other questions. Best. Mike@GEA
Sorry, there was a problem. Please try again later.Induction, or true induction, simply means a magnetic field is generated between the element and the magnetic surface one cooks with - pots, pans, etc. These must be magnetic (non ferrous metals do not work) or have enough iron content to interact with the range elements. The generated field utilizes the heat caused by the oscillation of the field through the metal surface, releasing heat in a controlled manner. This is an induction range. Convection refers to the process of a fan creating circulation within the cooking cavity. Potentially refining the heat circulation and reducing hot spots, making for a more even baking process. Often the temperatures are much more intense and tend increase cooking speeds, reducing cooking times.
