“We are trying to replace a 30" gas cooktop with downdraft, GE with Kitchen aid. Will the dimensions and downdraft attchmt fit exactly? In other words, will this Kitchen aid fit as an exact Replacement? One for one? we are looking at: Model KCGD500GSS”

you have to look at the cut out specs for both. there is always a lip on the cooktop but I would try to keep the cut out specs the same.
