“In the photo there is something on top of the right grates...is that a griddle and is it stuck to the grates or can the griddle be removed? when the griddle is removed, are all the grates still there?”

There's an oval burner beneath the griddle. Not big enough for a 10" tortilla, but big enough to flat top a couple of burgers at one time or to make grilled cheese on. No need to remove grates when using the griddle - just take off the griddle.
