Hi, Jerry! The cancel button will have to be pressed in order to stop the operation of the WCEP6427F; we'd strongly recommend against running the unit with the door open! The control panel doesn't have a quick start feature that can be set to X minutes, but there is a +30 mode that functions the same way. ^Ian
