• - Select Manual Mode - 'M' in the dial - Press 'Menu' button - Select 'Shooting Menu' - Select 'Set Picture Control' - Select 'Monochrome'

• Yes, there is a monochrome picture control. There are also options that allow you to simulate the effect of color filters.
