What's likely happening is that your wrist is brushing up against the touchpad, which may be quickly highlighting text, and replacing it with what you're typing at the moment. One recommendation might be to use a USB mouse, and change your mouse settings to "disable the touchpad when the USB mouse is attached". This way, whenever you're typing and have your mouse plugged in, you're not brushing against the touchpad.
