The convection feature on the FX510 gas range means that it has a built-in fan in the back of the oven that helps to circulate the hot air so food cooks more evenly. "Hidden Bake" refers to the fact that the source of heat used for baking on the bottom of the oven is covered. In this oven, there is a fan which can be activated by choosing "CONV Bake" or "CONV Roast" instead of "Bake" or "Roast" so there is a choice if you want to use the convection feature or not. I have only used the regular Bake setting, and everything came out great. Maybe I will try the "Roast" setting with a turkey. I don't know why convection is such a big deal, but I'm not a chef. Maybe it's just a fad. I do not know what " hidden oven" means. I have not seen that.
