“The center griddle does not get hot enough. It has never put out much BTU and we were hoping there was an adaptor or different orifice we could swap out to make it work better?”

You may need a larger valve on your gas intake. I didn't know that was a thing until my range was installed and the technician did it for free. He said it would allow all 5 burners to maintain adequate and consistent heat. He also said it's pretty much a necessity when installing a 5 burner range.
