Yes you can set the display to be always on. This will kill your battery fairly quickly so I wouldn't recommend it. Having it turn on when you gesture works fine and saves the battery when you're not actually looking at the screen.

The best one for what you are looking for would be Samsung gear S2 Smartwatch it has all you would be looking for and more, the Samsung gear S3 Frontier smartwatch has a big face on it but it has the same stuff as the S2 has so the it would be best to just get the S2 smartwatch then the S3 smartwatch. If you like it just as much as I do then your life will be easier by all it can do.
