“Does this device support the use of a docking station? I'm assuming the Thunderbolt output would be used. Also, can a second hard drive be added or would external storage be best? Thanks!”

You can use the Dell D6000 docking station with this system and since the system has only two PCIe NVMe Gen 3 x4 slot, there is no space to add a hard drive.
