RAM stores small packets of data from applications and processes you have recently used, for quick access later. ROM (read-only memory) stores actual, permanent information, such as apps, photos, contacts, text messages, etc. As for email, it all depends if the host uses POP or IMAP. POP is more common, and in that case, the emails do take up space, as the emails are duplicated from their server and pushed to your phone.
