A: The Hz of an image is the frequency of the signal that is being sent to the TV. Although in this case, the term also refers to the frames per second the image is displayed at, on the panel itself. A 60Hz image is shown at 60 FPS, and a 120Hz image is shown at 120 FPS. A: The Information Bar on your screen that appears when you change inputs, channels on some cable boxes, or press the INFO button on the remote will display the incoming signal. Not all incoming signals will be 1080p resolution or 120Hz, so the television will process the signal and upconvert the signal to 1080p and 120Hz regardless of the incoming signal. If you see 720p/60Hz, that just means your incoming signal is 720p resolution cycling at 60Hz. The television will process that picture so that it's at the native resolution of - in this case - 1080p and 120hz.
