Will eero, in general, work with Starlink, yes.
If you get the adapter that provides an ethernet cable (or have one of the older Starlink modems that have ethernet ports), yes, it should work fine if you have an eero with an ethernet port. The head/gateway eero must have a connection to the internet via ethernet, it will then create its own wifi network, the other eero can connect to that gateway, wired or wirelessly, and will broadcast the same wifi network, giving your devices a much closer access point to connect to.
This particular eero, the 6 extender, does not have any ethernet ports, so it can only connect wirelessly to another eero that is creating a network.
