The answer is that yes, you can add a date taken to your file, but not via the Epson scanner interface. Use the scanner to create a picture jpg file. After scanning, go to the file and right click on it, then choose the 'properties' option. In the Properties box, click on the "Details" tab. You can now fill in the 'date taken' and a bunch of other fields that can be saved in the jpg picture file.
