If you get without cellular there is no additional charge on your data service. If you get it with cellular, there is a $10 per month additional charge to use the watch when you don't have your phone with you. If you want to be able to make calls etc without having your phone on you, you can get the cellular model and pay the data fee. If you always have your phone on you anyway you can get the non-cellular version and you won't have to pay anything per month, the watch will just connect to your phone.
Sorry, there was a problem. Please try again later. Not necessarily data, the watch get’s most of it’s data from your iPhone’s existing data via sync intervals, but if you use Apple Music and stream music to the watch or from the watch to AirPods, yes, it’ll use your data. I had a previous series 1 watch and it pulled VERY little data from my iPhone. I’ll try & post an update after I’ve used this watch for a full 30-day cycle. If you download songs from Apple Music to your iPhone or watch, it’ll use even less.

For the most part you’re/the Apple Watch stays in sync with your iPhone and can retrieve information from your iPhone without using your data, however there are somethings it will need to access via your data plan that are not available on your iPhone. However since I have owned the first Apple Watch and now own the series 3, in my experience with my first Apple watch it took less than 1% of data from my plan per billing cycle.
